Creamy, comforting, and totally vegan & gluten-free! This easy mashed potato recipe is perfect for any occasion

Ingredients
  • 2 lbs russet potatoes (peeled and cubed)
  • 1/2 cup vegan butter
  • 1/2 cup vegan sour cream
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 cloves garlic
  • 1/4 cup unsweetened plant-based milk (optional for or thinner consistency)
Instructions
  1. 7. Boil the potatoes: Place the cubed potatoes and garlic cloves in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring to a boil, then reduce heat to a simmer and cook until tender when pierced with a fork (about 15-20 minutes).

  2. 8. Drain the potatoes: Drain well in a colander and return them to the pot.
