Crispy Air-Fryer Black Bean & Mushroom Taquitos! Vegan & gluten-free. Easy, flavorful & delicious.
Ingredients
Instructions
- 1. Preheat your air fryer to 320°F (160°C)
- 2. In a saucepan, cook mushrooms, onion, and garlic in ¼ cup water over medium heat for about 10 minutes, or until onion is translucent, stirring occasionally. Add water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
- 3. Stir in beans, tomato paste, and taco seasoning. Cook 5 minutes, stirring occasionally. Remove from heat. Stir in salt. Taste and adjust seasoning.
- 4. Warm tortillas according to package directions. Wrap in a kitchen towel to keep warm.
- 5. Lay a warm tortilla on a clean surface. Spoon 2-3 tablespoons filling horizontally across middle of tortilla. Starting from edge closest to you, roll up tortilla, tucking it under filling and rolling tightly to make a thin roll. Place assembled taquito 1 seam-side down on a tray lined with an additional kitchen towel. Keep covered. Repeat with remaining tortillas and filling.
- 6. Transfer half of the taquitos, or as many as can fit, into the air fryer. Air-fry 7 minutes or until tortillas are crisp and slightly browned around the edges.
- 1. Serve warm with guacamole and/or sour cream..
Note
- For extra crispy taquitos, lightly spray with cooking oil before air-frying.
- Be stingy with the filling to ensure crispy tortillas.
- Add a can of drained diced tomatoes to the filling for extra moisture and flavor.
- Use a food processor to quickly chop vegetables.
- For a cheesy flavor, add nutritional yeast.
- Spice it up: Add cayenne pepper or hot sauce.
- Use sweet potatoes instead of mushrooms.
- Bake at 375°F (190°C) for 15-20 minutes instead of air-frying.
