  1. 1. Open the can of pinto beans and drain them using a colander, reserving the liquid.
  2. 2. In a medium pan, melt the vegan butter over medium heat.
  3. 3. Add the drained pinto beans to the pan. Sprinkle with garlic powder, onion powder, cumin, chili powder (if using), and salt. Stir to combine and heat for a couple of minutes.
  4. 4. Using a potato masher or the back of a spoon, mash the beans to your desired consistency.
  5. 5. Add about 2 tablespoons of the reserved bean liquid (or vegetable broth) to the beans. Continue mashing and stirring until the liquid is absorbed. Add more liquid, 1 tablespoon at a time, if needed to reach a smooth, creamy consistency.
  6. 6. Reduce heat to low and simmer, uncovered, for 5 minutes, stirring occasionally. Taste and adjust seasoning as needed.
