Sample Recipe

Baked Coconut Chicken

This recipe is a family favorite – a delicious and easy way to enjoy chicken with a tropical twist. The coconut coating adds a subtle sweetness and a delightful crunch, making it a guaranteed crowd-pleaser.

Ingredients:

  • 2 eggs
  • 2 Tbsp milk
  • 1 lb thin chicken breasts
  • 1 cup gluten-free bread crumbs
  • ½ cup sweetened coconut flakes
  • 2 Tbsp melted butter
  • 1 tsp salt blend (use your favorite garlic pepper salt blend (recipe for mine is on page 3 of cookbook)

Instructions:

  1. Preheat oven to 375 degrees and line a baking pan with parchment paper.
  2. Whisk together the eggs and milk until well blended and smooth.
  3. In another bowl, combine the bread crumbs, coconut flakes, and melted butter with a fork until all the crumbs are moistened with the butter and the mixture is well blended.
  4. Sprinkle the chicken with the salt blend, dip in the egg mixture and coat well.
  5. Press into the bread crumb mixture and roll over and press again until well coated and place in the pan. After doing this for each breast, press any remaining bread crumb mixture onto any bare spots of the breasts.
  6. Bake for 25 minutes or until the internal temperature reaches 165 degrees.
  7. Serve with mango marinade, honey mustard, or any of your favorite sweet sauces.

Prep Time: Approximately 15 minutes Cook Time: Approximately 25 minutes
